John Y. Brown Jr. is an unusual entrepreneur in
taking advantage of new start up opportunities in the
restaurant business. As C.E.O. he built a national
reputation in franchising by opening over 4,000 stores
without litigation.
- In the early 1970’s Brown created the first small
fast food unit called Ollie’s Trolley, (15 years
before Rally’s and Checker’s). This was created a year
before drive-thru became prevalent.
- In 1984, along with his wife at the time, Phyllis
George, Brown created “Chicken by George”. The
supermarket fresh marinated chicken breasts eventually
sold to Hormel three years later and remained on the
national retail market for over 15 years. This concept
was created with one employee and a secretary.
- In 1990, Brown was co- partner of Miami Grill
that grew to a chain of 150 outlets before selling out
to his partner.

- In 1991, Brown started a chicken company named
Roasters along with the country music star Kenny
Rogers as the brand, and franchised over 300 stores
during the first four years before selling out. At that time the stores were
averaging One Million Dollars annually and one year were
ranked number one by the “Institution’s Magazine” for
food quality.
- Brown started a chain with David Toole called “Roadhouse
Grill” in South Florida and built it into $130
Million in sales before selling it.
- In 1996, Brown founded a company by the name of “The
Original Steakhouse and Sports Theater” which he
sold two years later.
- In 2003, Brown started a salad concept for malls and
retail centers called “Salad Creations” that he
sold to developers that have currently over 50 units in
operation.
- A recent venture was one “Suzanne’s Kitchen”
which he contracted with Suzanne Summers as a name
brand. Over 2000 similar stores were opened, but it was
a short lived concept.
- In January of 2010 Brown and his partners acquired
the concept rights to franchise and develop “ZAZA’s
Fine Salad and Wood Fired Pizza”, launched in Little
Rock, Arkansas.
